WEDDING!

So those of you who have followed me a little bit, know my best friend is getting married!! (Above is the new setting on her ring) The wedding is this weekend! April 28th.  It has been so crazy, but so fun.  I just finished up the final touches on my speech and feel pretty good about it.  I will be sure to post pictures and blog next week.

Spring and Summer Time Food

Spring and summertime possess the ripest fruits and vegetables for tasty meals on the grill. Fish and chicken, which are low in fat and high in protein, make for exquisite healthy cuisine. The two recipes below feature a mouth watering delicious delight to the palate all cooked on the BBQ.

 

Peach Pineapple Fish…

There is nothing as appetizing as fresh fruit on a meal sitting outside on the patio and cooking on the grill. Here is a tasty treat guests will enjoy.

 

Ingredients:

• 6-8 tilapia fillets

• 2 cups fresh pineapple chunks or cubes

• 2 cups fresh peach chunks or cubes

• 2 green onions chopped small

• 3-4 tablespoons of lime juice (split)

• ¼ cup of finely chopped green pepper

• 1 tablespoon canola oil or EVOO

• Dash of cayenne pepper

• 2 dashes of black pepper

• 2 dashes of salt

 

Directions:

Combine in a small bowl the pineapple & peach cubes, onions, green pepper, 2 tablespoons of lime juice, salt & pepper and cayenne. Mix together and place in aluminum foil and pinch the sides to place on upper part of grill to heat while fish is cooking.

Lightly coat grill with canola oil or spray. Place fish on grill to cook for 3 or 4 minutes on each side. Once fish is cooked, place fish on serving tray and empty mixture on top and serve. This is delicious and refreshing ideal for spring or summer. Add a margarita to drink and the meal is complete.

 

Zesty Salsa Chicken…

Sweet and savory grilled chicken with herbs and spices loaded with flavor and pizzazz to fill the senses with zest.

 

Ingredients:

• 4 – 5 skinless chicken fillets

• 1 tomato diced into small cubes

• 3/4 cup honey

• ½ cup of granulated sweetener (Splenda is good)

• 1 teaspoon basil

• Dash of sage

• 1 teaspoon salt

• 1 teaspoon pepper

• 1 teaspoon cayenne pepper

• ½ teaspoon oregano

• ¼ teaspoon parsley

• 4 – 6 cloves garlic (depending on tastes) minced

 

Directions:

Mix together honey, sweetener, tomato, basil, sage, salt & pepper, cayenne pepper, oregano, parsley and garlic.

Grill chicken until cooked. Place chicken in serving dish and pour mixture on top and place in either microwave or oven at 350 degrees for 15 minutes. The zest of the mixture will blend during this time to make an unbelievable tasty chicken everyone will enjoy. Serve with a white wine cocktail.

Orlando: Disney and Beyond

I’ve spent a lot of time lately reliving my Orlando vacation. It was an amazing trip! We stayed at the All-Star Resort and were pleasantly surprised with the low cost and beautiful rooms. It was such a fun place to stay!

We were also surprised at the ease of getting around Orlando. Shuttles run everywhere; from the hotels to the parks and even to downtown Orlando. I almost wished I hadn’t spent the money on a rental car, but it did come in handy on our trips to the beach and the Kennedy Space Center. The Park Hopper Pass allowed us to pay one low price for all the parks and we had a blast at every single one. Read on to learn more about my favorite vacation spot and why Orlando is amazing even for adults.

We had a late flight to Orlando so by the time we’d checked into the All-Star Resort the parks were just about to close. We decided to head for Downtown Disney. We had dinner at a quiet Italian restaurant called Portobello, and then danced the night away at Planet Hollywood.

The next day was reserved for Epcot and we had a great time wandering around experiencing a little something from every corner of the world. The details are so amazing. There were plenty of times we forgot we were in a theme park in Florida; it was almost like we were traveling the world one hour at a time. Bonus: Epcot sells alcohol along with all of the decedent food from each nationality.

I couldn’t wait to get to Disney’s Animal Kingdom and I was not disappointed. The Kilimanjaro Safari got us up close and personal with the animals and Expedition Everest combined wildlife viewing with a runaway roller coaster ride.

We decided to take a break from the parks for a while so we spent the next couple days wandering around the other attractions in the area. We parasailed in Daytona Beach, suntanned in Cocoa Beach and met an astronaut at Kennedy Space Center.

The weather was amazing so we decided to check out Typhoon Lagoon. It was great fun to watch all of the children play in the wave pool, while we sat at the tiki hut and had what is quite possibly the best Mai Tai in existence. It was the greatest!

We’d saved the Magic Kingdom for our last day. As soon as I walked through those gates I was a kid again. The Castle will always be my favorite attraction. We stayed all day and enjoyed the parade and fireworks show.  Absolutely beautiful.

Our Orlando vacation was outstanding. From the bars of Downtown Disney to the thrills of Animal Kingdom and beyond, Orlando is the perfect destination for adults and kids alike.

Step Out in Spring Fashion

Now that spring is finally appearing, you’ve probably put away all of those heavy sweaters, jackets, mittens, and gloves. The beautiful, warm weather and pleasant sunshine will have you dreaming of flowy skirts, light tops, and sandals. If you’re in the market for a new spring wardrobe, you’ll have a variety of trends, looks, and prints to choose from, all in choices that can transition from day to night in a snap, no matter if you live in the city or country.

There are a number of looks out there that almost any woman can pull off with a little expertise. This spring, look for bold prints, including florals, in a variety of bright colors, all in fabrics of natural origin. If you’ve ever traveled to the Hamptons, then you know this look is the epitome of style there. Here are five outfit ideas you can use, possibly with some pieces you already have in your closet, to create that sense of Hamptons style.

The White Dress

Nothing is more versatile or can show off a tan more than a beautiful white summer sundress. During the day, dress it down with flat sandals and simple jewelry or a straw hat. By night, add chunky gold jewelry and wedges to create a sleep, fun summer look. Don’t forget to bring a light sweater to cover up if the evening gets cool.

 

Casual Cropped Pants and Fitted Tee

Be casual, comfortable, and chic in this easy combination. Try a pair of brightly colored chinos rolled with metallic sandals and chunky jewelry to complete the look. Have fun with different patterns and graphics on your tee shirts, or try a fitted polo shirt in a bright color. This outfit is preppy and cool.

 

Spring Skirt and Tee

Pick a pretty and feminine skirt in a spring pastel shade and dress it down with a matching knit top. This combinations allows you to feel girly but isn’t stuffy or formal. To add to the cool factor, choose a pleated or full skirt. If you really want to show off, add a pair of platform shoes to this outfit. If you want to be more casual, pick flat footwear.

Skinnies and Stripes

Both skinny jeans and striped clothing have been in style for several seasons now, and show no signs of going out any time soon. If you haven’t tried these trends, now is the time. They go well together. Try a navy striped top with a pair of stretchy skinny jeans and some ballet flats. This look is perfect if you’re planning to go sailing for the day or just if you’re having lunch with the girls.

 

Pretty Party Dress

The spring and summer months are full of parties, weddings, and other celebrations. Be prepared for any event with a pretty, flirty party dress. Choose from florals, pastels, or stripes to create a look that’s on trend and fits well with the season. Don’t forget to add some sky high heels or platforms, as well as some coordinating jewelry to create the total package.

 

If you make sure your spring wardrobe contains each of these easy outfit combinations, you’ll be prepared for any type of event the season throws your way, whether you live in the Hamptons, the city, or the suburbs.
